Astaxanthin, a reddish-purple pigment, is a carotenoid and is primarily produced by green algae. It is responsible for the red coloration of crustaceans and fish that consume these algae. Astaxanthin is one of the world's most powerful antioxidants, with positive effects on the skin, eyes, cardiovascular system, and the immune system. Antioxidants prevent oxidation
and act as free radical scavengers. They inactivate reactive oxygen species (ROS), the excessive levels of which lead to oxidative stress, which is associated with aging and disease.
Antioxidants are also produced in the body. These include the amino acid glutathione, uric acid, and melatonin. The plant-based antioxidants we consume through food include vitamins C and E, secondary plant compounds such as carotenoids, and various polyphenols (flavonoids, anthocyanins, phytoestrogens, nordihydroguaiaretic acid, and others), which are found in numerous vegetables, fruits, herbs, and seeds.
